Thierry Cavallo, a goat farmer, has been based in Plan-de-la-Tour since 1991, at the foot of the San Peire hill. Focusing on the well-being of his animals, his presence at the weekly Thursday morning market in Place Foch depends on the season and production. Known and recognized throughout the Gulf of Saint-Tropez for their quality, Cavallo family cheeses are also known as "Les Fromages de Biquette".
