- Vegetables from the Jardin de la Piboule, Cantabrian anchovies
- Scallops in their shells, sautéed leeks, Melanosporum truffles
- Foie gras terrine with port and cognac, shallot confit

Main courses:
- Butternut squash and saffron risotto, 24-month aged Parmesan, Bronte pistachios
- Mediterranean sea bass, red rice, candied parsley roots, sauce vierge
- Pork loin, mashed potatoes, carrots and Brussels sprouts, jus

Cheese selection.

Desserts:
- Crème caramel with Madagascan vanilla
- Chocolate mousse, Piedmont hazelnuts, olive oil and fleur de sel
- Bourdaloue tart, pear and citrus sorbet
